Change the "Default Format" to a "1 channel" option from the drop down. Uninstall the drivers in Device Manager and reinstall them. Instead of using "Motu 1-2" as your recording device, select "Motu Loopback Mix" as your mic, if you want to record in stereo -- this will give you 2 identical tracks.
